My Paleo Banana Bread

Preheat the oven to 180 C

Grease and line a loaf tin. 26 cm

 

In a Bowl:

Sift together:

1 cup of almond flour (200 gr)

1 cup of  fine coconut flour ( 200 gr)

A pinch of Himalayan salt

1/2 tsp bicarbonate of soda

 

In a another bowl

Whisk Together:

3 eggs ( extra large)

1T coconut oil melted

5T organic maple syrup

1tsp vanilla

3 mashed ripe bananas

 

Add wet to dry ingredients

Add in chopped up dates (8-10)

 

Spoon into loaf tin

Bake at 180 for 30-40 minutes until golden on top and toothpick comes out clean.
